漓江桂花鱼

　　桂花鱼又名鳜鱼，是漓江里一种凶猛的肉食性鱼类，为四大淡水鱼之一，其肉质细嫩，营养丰富。此鱼在桂花飘香的秋天尤为肥嫩，食用时多习惯清蒸。
　　将鱼刮去细鳞，用竹筷从鱼口内掏出鱼鳃、内脏；另将姜片放在鱼上，鱼身下用三根竹筷架空，上笼，旺火蒸熟，出笼，撒上姜葱丝、胡椒粉，淋上豉油；炒锅置旺火上，烧热花生油，淋在姜葱丝上，撒上芫荽即成。
　　此鱼质地细嫩、肥美，入口爽心。
